SPINACH CORN BREAD 
1 lg. onion, chopped fine
1 stick butter
1 pkg. Jiffy corn muffin mix
4 eggs, beaten
6 oz. cottage cheese
1 tsp. salt
Dash of pepper
1 box frozen chopped spinach, thawed

Saute onion in butter. Combine with rest of ingredients. Mix all ingredients together and pour into a shallow buttered casserole dish. Bake 45 minutes at 400 degrees. Cut into squares.
