SPINACH CORN BREAD | |
1 pkg. frozen, chopped spinach 1 pkg. Jiffy corn muffin mix 4 eggs 1 stick butter 1 sm. onion, chopped 1 tsp. salt 6 oz. cottage cheese Thaw and drain the spinach. Beat the eggs. Add the Jiffy mix, melted butter and salt. Beat only until mixed. Stir in the onion, cottage cheese and drained spinach. Pour into greased 8x8 inch pan. Bake at 400 degrees for 20-25 minutes. |
