PUMPKIN DATE MUFFINS 
3 1/2 c. flour
2 tsp. baking soda
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
2/3 c. shortening
2 2/3 c. sugar
4 eggs
2 c. pumpkin
2/3 c. water
2/3 c. walnuts
2/3 c. chopped dates

Preheat oven to 350 degrees. Sift together flour, baking powder, soda, spices. Cream shortening and sugar until light and fluffy. Add eggs one at a time. Add pumpkin and water and beat well. Add dry ingredients stirring just until moistened. Stir in walnuts and dates. Pour into muffin tins and bake 30 to 40 minutes. Cool 10 minutes. 12 to 16 muffins.
