STEVE'S POTATO DUMPLINGS (BAKED) 
7 lg. baking size potatoes
2 bunches green onions
2 c. croutons
1 stick butter
4 eggs
2 tsp. nutmeg
Salt to taste

Cook potatoes and remove skins. Grate and mix with eggs (salt if needed). Saute chopped green onions, nutmeg and croutons (all fried in butter). The potato mixture is formed into balls and placed on a greased baking sheet. Bake 30 minutes at 350 degrees just before serving.

Use an ice cream scoop to make uniform dumplings. Can be frozen after baking and reheated. Makes about 50. Good with pot roast.
