POTATO DUMPLINGS 
6 med. potatoes, peeled & grated
6 slices of white bread
1 sm. onion, peeled & grated
1 tsp. parsley flakes
2 eggs, beaten
4 oz. flour
Salt & pepper to taste

Remove crust from bread and discard, then soak bread in cold water. Grate the potatoes in a large bowl. Then squeeze water from bread and add to the potatoes along with all of the other ingredients. Mix well, then form this dough into small balls and drop into a large pot of salted, boiling water. Cover the pot and let simmer 10 to 15 minutes. Remove dumplings from water and serve warm.
