SWEET POTATO CASSEROLE 
Potatoes:

6 medium sweet potatoes or yams
1 tbsp. butter
1 1/2 tsp. salt
1/2 cup milk
1 tsp. cinnamon
13 oz. can pineapple tidbits (in natural juice)

Beat first five ingredients until light and fluffy. Then fold in the pineapple tidbits.

Topping:

1/2 cup granola
1/2 cup raw sugar
1/4 cup butter

Mash together with fork and sprinkle on top of potatoes.

Bake at 350°F

for 20 minutes.
