SWEET POTATO CASSEROLE | |
6 med.-size sweet potatoes, boiled, peeled, and mashed (about 4 c.) 1/2 c. butter, softened 1/4 c. sugar 1 tsp. ground cinnamon 1 tsp. vanilla extract 1 (20 oz.) can crushed pineapple, undrained 1 c. golden raisins 16 lg. marshmallows Combine mashed potatoes, butter, sugar, cinnamon, and vanilla; beat at medium speed of an electric mixer until smooth. Add crushed pineapple and raisins; stir well. Spoon mixture into a well-greased 3 quart casserole. Bake at 350 degrees for 15 minutes. Top with marshmallows. Bake an additional 10 minutes or until marshmallows are golden brown. |
