MEATLESS LOAF 
2 c. brown rice
1 1/2 c. (6 oz.) grated Cheddar cheese
1 c. finely chopped carrots
1/2 c. plain yogurt
4 eggs, beaten
1/4 c. chopped green onion
2 tbsp. chopped parsley

Grease 8 x 4 inch loaf pan. Preheat oven to 350 degrees. Combine all ingredients until well mixed. Spoon into pan. Place pan in a large roasting pan in the oven and fill with water to 1 inch from the top of the loaf pan. Bake 1 hour or until knife comes out clean. Serve as is or with cheese sauce made with:

2 tbsp. butter
2 tbsp. flour
1 1/2 c. milk
1 c. grated Cheddar cheese
Dash cayenne pepper (optional)
