BEEF STROGANOFF 
1 1/2 - 2 lbs. tenderloin tips, sliced 2" thick
1/4 c. butter
1/2 lb. fresh mushrooms, sliced
3 tbsp. flour
1 1/4 c. hot water
1/2 c. wine
1 c. sour cream

Saute tips of beef, then mushrooms in butter until brown. Add flour and cook until browned. Add hot water; bring to a boil and remove from high heat. Simmer about 15 minutes until beef is tender. Place sour cream into large bowl and slowly add half of beef sauce, stirring constantly to prevent curdling. Pour back into meat mixture. Reheat all to simmer for 10 minutes. Serve with noodles or rice.

Optional: Include 1 to 2 onions sliced and sauteed with mushrooms.

Preparation: 30 minutes. Cooking 35 to 45 minutes. Serves 4.
