EGGPLANT CASSEROLE 
1 med. eggplant
1 tsp. salt
2 tbsp. chopped green peppers
1 egg, beaten
1 med. onion, chopped
3/4 c. bread crumbs
1 c. cream style corn
1/2 tsp. pepper
1/2 c. shredded cheese

Cook eggplant until tender. Drain. Mash and add all ingredients except cheese. Put in a 1 1/2 quart baking dish with cheese spread on top. Bake at 350 degrees for 30 minutes.
