EXTRA SOFT OATMEAL COOKIES 
1 c. softened butter
2 eggs
3/4 c. brown sugar
1/4 c. sugar
1 sm. box instant vanilla pudding
1 1/4 c. flour
1 tsp. baking soda
2 c. oats
Optional: 1/2 c. pecans, 1/2 c. raisins

Mix sugars, butter and eggs until creamed thoroughly. Add rest of ingredients, mixing well. Drop by teaspoonful on sprayed cookie sheets, 2 inches apart. Bake at 350 degrees for 8 to 10 minutes. Store in sealed container.
