FRUIT COCKTAIL BARS | |
2 eggs 1 1/2 c. sugar 2 1/4 c. flour 1 1/2 tsp. baking soda 1/2 tsp. salt 1 (16 oz.) can fruit cocktail, drained, reserve juice 3/4 c. coconut 3/4 c. walnuts, chopped TOPPING: 3/4 c. sugar 1/4 c. evaporated milk 1/2 stick butter 1/2 tsp. vanilla Beat eggs and sugar until fluffy. Sift dry ingredients together. Add dry ingredients alternately with fruit juice to egg and sugar mixture. Mix well. Add fruit and blend in thoroughly. Put wax paper on cookie sheet with edges. Pour batter in this pan. Sprinkle coconut and nuts over the top. Bake at 350 degrees for 20 - 25 minutes until batter springs back. While bars are baking, cook topping ingredients in saucepan on medium heat while stirring 1 - 2 minutes Then put to cool. When bars are done invert them onto another cookie sheet and tear off wax paper. Let steam escape for a few minutes then return to first cookie sheet. Pour the sauce over bars and let cool. Cut into 2 inch squares. |
