MAKE AHEAD BRAN MUFFINS 
2 c. All - Bran
1 c. boiling water
1-1/2 c. sugar
2 c. buttermilk
1-1/2 tsp. baking soda
1 c. Wheat Chex
1/2 c. butter
2 eggs
2-1/2 c. flour

Mix All - Bran, Wheat Chex and boiling water together and let set while preparing rest. Beat together butter, sugar and eggs. Add buttermilk, flour and baking soda. Mix all ingredients together and store in the refrigerator in a tightly sealed container. When ready to cook, spoon desired amount into muffin tins. DO NOT stir down. Bake at 375 degrees for 30 minutes or until done.
