2 lbs. bulk sausage
2 eggs, beaten
2 tbsp. grated onion
1 1/2 c. fine dry bread crumbs
1/4 c. chopped parsley

Lightly butter a 9" ring mold. Mix ingredients well and pack into mold. Bake at 350 degrees for 20 minutes. Remove from oven and pour off excess fat. Bake an additional 20 minutes. Turn onto heated platter and fill hole in ring with 8 to 12 scrambled eggs. Serves 4 to 6.
