LEMON SQUARES 
CRUST:

1 c. butter
2 2/3 c. flour
1/2 c. sugar

Mix butter, flour and sugar. Press into ungreased 9"x12" pan. Bake at 350 degrees for 20 minutes or until slightly brown on edges.

FILLING:

4 eggs
1 1/2 c. sugar
4 tbsp. flour
1/2 tsp. baking powder
6 tbsp. lemon juice
Lemon zest
Confectioners' sugar

Beat eggs; add sugar, then flour and baking powder. Stir in lemon juice and zest. Pour over partially done crust. Return to oven. Cook 20 minutes longer. Sprinkle with confectioners' sugar. Cool well before cutting into 1" squares. Makes 3 dozen squares.
