FRIED SWEET POTATOES 
4 lg. sweet potatoes
1/4 c. orange flavored liquor
1/4 c. honey
1 tsp. lemon rind
2 c. flour
2 c. light beer
Vegetable oil

Cook potatoes in boiling water 5 minutes. Let cool to touch. Peel and cut into 1/2 inch slices. Place in a large shallow dish.

Combine orange flavored liquor, honey, lemon rind, mixing well. Pour over potato slices. Marinate 1 hour. Combine flour and beer, stirring smoothly. Dip sweet potato slices in mixture. Fry in hot oil, 390 degrees, until golden brown.
