COUNTRY SAUERKRAUT AND SAUSAGE 
8 Brown 'n Serve sausages, cut in 1-inch pieces
1 tbsp. butter
1 jar sauerkraut, drained
2 tbsp. brown sugar
1 egg, beaten
2 tbsp. grated onion
2 1/2 c. prepared mashed potatoes

Brown sausage in butter over medium heat, turning frequently. Stir in sauerkraut, and brown sugar, stir for 2 minutes to heat thoroughly. Pour mixture into 2-quart casserole and set aside.

Add eggs and onion to mashed potatoes, stir well, spread over sauerkraut in casserole. Bake at 350 degrees for 25 minutes uncovered. Serve hot with corn bread.
