TOFFEE COOKIES 
1 c. shortening
Pinch of salt
1 c. brown sugar
2 c. flour
1 egg yolk, beaten
1 egg white
2 tsp. cinnamon
1/2 c. chopped pecans

Cream shortening and sugar. Add beaten egg yolk. Sift flour, salt, and cinnamon and add to rest. Put on cookie sheet and pat or roll to 1/4 inch thickness. Spread with unbeaten egg white, press with fork, sprinkle with pecans.
