GINGERBREAD 
2 c. flour
1 tsp. allspice
1 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 tsp. ginger
3/4 c. sugar
1/2 tsp. salt
3/4 c. melted butter
2 egg yolks
1 c. syrup (molasses)

Mix all together and beat well. Then add 1 cup boiling water with 2 teaspoons soda added and beat again thoroughly. Lastly, add 2 egg whites, beaten stiffly by folding into mix.

Bake in two loaves slowly for about 1 hour (or stem pan).

This recipe came to my mother from a family member in Pennsylvania about 75 years ago. No matter what the feast, there were always two loaves of gingerbread and a BIG bowl of real whipped cream.
