ZUCCHINI-TUNA ORIENTAL SALAD 
1 1/2 c. cubed or sliced raw zucchini
1 1/2 c. green pepper
1 1/2 c. pineapple chunks, drained or fresh
2 c. celery
5 oz. water chestnuts or bamboo shoots or both
Green onions, sliced
Sunflower seeds
Salad greens
1 can Chinese noodles

DRESSING:

1 c. mayonnaise
2 tsp. or less curry powder
1/2 tsp. salt
A little lemon juice or pineapple juice to thin

Cut celery, green pepper, pineapple and zucchini into bite sized pieces to give crunchy effect.

Mix dressing with all ingredients, except noodles and greens. Chill thoroughly. Just before serving, toss lightly with salad greens and Chinese noodles. 6 servings.
