SWISS CRAB CASSEROLE 
1/4 c. butter
1/2 c. chopped celery
1/4 c. chopped onion
1/4 c. chopped green pepper
1/4 c. flour
1 tsp. salt
2 c. milk
2 c. cooked rice, cooled
2 (6 oz.) cans crab meat
2 c. shredded Swiss cheese (8 oz.)
1 (4 oz.) can drained sliced mushrooms
1/3 c. pitted olives
1/4 c. sliced almonds
2 tbsp. melted butter
1/3 c. dried bread crumbs
3 slices Swiss cheese

In a saucepan melt the butter. Saute celery, onion, and green pepper. Blend in flour and salt. Remove from heat, gradually adding milk. Return to heat.

In a large bowl combine the remaining ingredients. Toss lightly and add the sauce ingredients to it. Put into a casserole. Melt the 2 tablespoons butter with the bread crumbs. Place over casserole ingredients. Lay slices of cheese on top during the last 5 minutes. Bake until heated through at 350 degrees.
