SHEPHERD'S SALAD 
1 head Romaine lettuce, cut into strips
1 head Boston lettuce, torn into bite-size pieces
1 green pepper
1 sm. cucumber, pared, thinly sliced
1 tomato, cut into 8 wedges
1/4 c. thinly sliced radishes
Lemon Dressing (recipe follows)

Make Lemon Dressing. Combine all ingredients except Lemon Dressing in a large bowl. Refrigerate covered for 1 hour. Toss gently with Lemon Dressing just before serving.

LEMON DRESSING:

5 tbsp. lemon juice
1/4 c. olive oil
1 tbsp. distilled white vinegar
1/2 tsp. salt
1/8 tsp. pepper

Place ingredients in jar with tight-fitting lid. Cover and shake.
