INDIVIDUAL CHERRY CHEESECAKE 
8 oz. cream cheese
1/2 c. sugar
2 eggs
1 tsp. vanilla
Vanilla wafers
1 can cherry pie filling

Soften cream cheese. Add sugar, eggs and vanilla. Place a vanilla wafer cookie in the bottom of a cupcake tin (using muffin pan). Pour filling over wafer, filling half way. Bake 20 to 25 minutes (careful) in 325 degree oven. Watch carefully so as not to burn. (The vanilla wafer forms the crust of the cheesecake.) Cool completely (3 to 4 hours). Peel cupcake papers off. Top with cherry pie filling. Quick and fun for a last minute dessert.
