DICK'S SALADE 
Vegetables may be fresh, canned, frozen or any combination:

1 1/2 c. cooked diced carrots
1 1/2 c. waxed beans
1 1/2 c. string beans
1 1/2 c. peas
1 med. sized chopped sweet onion
2 stalks celery, diced
2 cans cut beets (not sliced), diced (be sure and keep beet juice)

Marinate all vegetables in the beet juice for at least 2 hours, stirring every half hour.

At the end of at least 2 hours, drain all juice. Put together 2 tablespoons sugar (heaping) with enough rice vinegar to dissolve sugar, (approximately 2 tablespoons). Whip together sugar, rice vinegar, and 1/2 cup Miracle Whip salad dressing thoroughly. Mix with vegetables, serve on a bed of lettuce.

Garlic flavored croutons may be added to enhance salad, serving tray can be garnished with sliced hard boiled eggs, decorated radishes and decorated sliced cucumbers.
