TWICE BAKED COCONUT BARS 
1 c. light brown sugar
1 c. butter (may use 1/2 butter)
2 c. flour
4 eggs
4 tbsp. flour
2 tsp. baking powder
1/2 tsp. salt
2 tsp. vanilla
1 c. pecans
2 c. flaked coconut

Mix first 3 ingredients like pie crust. Press into 9"x13" pan and bake 10 minutes.

While crust is baking beat eggs, flour, baking powder, salt and vanilla. Add nuts and coconut. Spread over hot crust and bake 20 to 30 minutes longer until golden brown and spongy on top at 325 degrees. Remove from oven and sprinkle with a little powdered sugar. Cut into small bars. These freeze well and are wonderful for the holidays.
