SKILLET CORNBREAD 
1 1/2 c. cornmeal (yellow)
1/2 c. flour
2 tbsp. sugar
2 eggs
4 tbsp. melted butter
2 c. milk
1 c. buttermilk
2 tsp. baking soda
1/2 tsp. salt

Mix soda in milk. Stir with beaten eggs into dry ingredients. Also add buttermilk, but save 1 cup milk for later. Melt butter in skillet. Pour in mixture. Then pour over 1 cup of reserved milk. Will make a custard center thus moist when baked. Bake for 20 minutes at 400 degrees.
