ARTICHOKE BALLS 
2 cans artichoke hearts, drained
2 eggs
1 tbsp. Parmesan cheese
1 c. bread crumbs
2 cloves garlic, finely chopped
Some olive oil

FOR COATING:

Some more Parmesan cheese
Some more bread crumbs

Mash artichoke hearts. Mix with eggs, 1 cup bread crumbs and 1 tablespoon Parmesan cheese. Saute garlic in olive oil then blend into artichoke mixture.

When cool roll into 1 inch balls. Roll each ball in a mixture of bread crumbs and Parmesan cheese. Serve like this or warm in oven. Serves about 6.
