IRISH SODA BREAD 
4 c. flour all purpose flour
1 tsp. salt
3 tsp. baking powder
1 tsp. baking soda
1/4 c. sugar
1/8 tsp. cardamom (optional)
1/4 c. butter
1 egg
1 3/4 c. buttermilk
1 c. raisins or currant (optional)

Combine in a large bowl the flour, salt, and baking powder, soda, sugar and spice, if used. Add butter, and cut in with a pastry blender or two knives until crumbly. Beat egg slightly and mix with buttermilk; add to dry ingredients and stir until blended. Turn out on a floured board and knead until smooth, 2-3 minutes.
