BETTY'S IRISH SODA BREAD | |
3 c. flour 1 tsp. salt 1 tsp. baking powder 1 tsp. caraway seeds 1 tsp. (level) baking soda 1/2 c. sugar 1 c. raisins 1 c. buttermilk 1/4 lb. butter 1 egg Mix flour, salt, baking powder, caraway seeds, baking soda and sugar. Work in butter with fingertips. Add raisins. In a small bowl, beat one egg with buttermilk. Make a well in center of flour mixture and pour egg and buttermilk into well and mix well. Turn out to knead on floured board, just enough to form a round loaf. Score top of loaf with a cross. Place in an iron skillet and bake in hot preheated 425 degree oven for 10 minutes. Lover heat to 375 degrees for next 30 minutes. |
