IRISH SODA BREAD 
2 c. all-purpose flour
2 c. unsifted whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/4 c. golden raisins, chopped
2 tsp. caraway seed
1 1/4 to 1 1/2 c. buttermilk
Non-stick cooking spray (such as Pam)

Preheat oven to 375 degrees. In large bowl combine all-purpose flour, whole wheat flour, baking powder, baking soda, and salt. Stir in raisins and caraway seed. Add enough buttermilk to make a dough that is firm but not dry. Turn the dough out on a lightly floured surface and knead until it is smooth (2 to 3 minutes) and then shape dough into a round loaf.

Using a sharp knife, cut an X about 1/4 inch deep in center of loaf. Coat a baking sheet with non-stick cooking spray, place the loaf on it and bake for 35 to 40 minutes or until the bottom of the loaf sounds hollow when it is tapped. Makes 1 loaf (16 slices). Each slice 124 calories, 0 saturated fat and 1 mg. cholesterol.
