JOLLOF RICE & EGGPLANT (AFRICA) 
1 lb. ground beef
2 c. rice, cooked
1 1/2 c. mixed vegetables
1 med. onion, chopped
1 pod hot pepper, optional
1 bell pepper
4 tbsp. oil
4 tbsp. tomato paste
1/4 c. water
Salt to taste
3 lg. eggplants, peeled & sliced

Peel and slice eggplant. Seasoned to taste and fry in 1 tablespoon hot oil. Set aside.

Heat remaining oil. Brown beef. Add in mixed vegetable, onion, pepper and salt to taste. Cook until tender. Add cooked rice, 1/4 cup water and simmer down for 8-10 minutes. Serve eggplant with rice. Makes 6-8 servings.
