LOADED MASHED POTATOES 
5 lb. potatoes
3/4 c. sour cream
1/2 c. milk
3 tbsp. butter
salt and pepper to taste
3 c. (12 oz.) shredded cheese
1/2 lb. bacon, cooked and crumbled
3 green onions, diced

Peel and cube potatoes. Boil in water until tender; drain water. Add sour cream, milk, butter, salt and pepper. Beat until light and fluffy. Stir in 2 cups of cheese, bacon and onions. Put into a greased 3-quart baking dish. Top with remaining cheese.

Bake, uncovered, at 350°F for 30 minutes or until heated thoroughly and cheese is melted.

This can be prepared the night before and baked the next day.
