ROAST OF PORK WITH HERBS 
1 pork loin roast
2 tbsp. butter
1 tsp. salt
1 tsp. pepper
1/2 c. flour
2 c. beef broth
1 c. cider (or apple) juice
1 clove minced garlic
1 tsp. crushed rosemary
1 tsp. chopped basil
1 tsp. nutmeg
1 tsp. ginger
1 c. cream (Coffee Rich works well)

Rub meat with butter, salt, pepper and sugar. Dredge with flour. Cook 30 minutes in 350 degree oven. Meanwhile, mix broth, cider, herbs and spices and cook for 5 minutes. Pour this mixture over roast and continue to baste frequently until roast is done - about 30 minutes per pounds.

Remove roast to warm platter. Stir cream into pan drippings and heat, but do not boil. Serve over roast slices. If drippings get too thick, thin as desired with more cider or apple juice.
