BUBBLE AND SQUEAK 
Leftover mashed potatoes
Leftover cooked cabbage
Salt and pepper to taste
2 tbsp. butter

Mix the potato and cabbage together in a large mixing bowl, and season with salt and pepper. Melt the butter in a heavy bottomed frying pan and add the vegetable mixture, press it down firmly with a spatula. Cook until golden brown underneath; flip it over and brown the other side.

Variations: Mashed cooked carrots, parsnips, turnips, peas and leeks may be substituted or added.
