BUBBLE AND SQUEAK CASSEROLE 
1 c. diced raw potatoes
1 c. thinly sliced onions
1 1/2 lbs. good steak
1 c. slivered green pepper
1/2 c. uncooked rice
1 can consomme
1 med. sized can tomatoes
1/4 c. cooked green peas
1/4 c. sherry
Salt, pepper, pinch of basil, thyme, and a bay leaf

Cut steak in bite size pieces and brown in butter. Butter casserole and put in a layer of diced raw potatoes salted slightly; add a layer of onions, then steak, green pepper, and peas. Top with rice. Add herbs to consomme and pour consomme and tomatoes over all. Work liquid well into dish. Bake for 1 1/2 hours at 350 degrees. If dish gets dry, add water or consomme. Add sherry just before serving. Remove bay leaf.
