BEST CHICKEN AND RICE EVER! 
8 chicken thighs or drumsticks
1 yellow onion, sliced
1 (6 oz.) box chicken and garlic flavored rice (Rice-A-Roni)
1/2 cup (1 stick) butter (I use salted)

SEASONING MIXTURE:

seasoned salt (Lawry's)
freshly ground pepper
garlic salt

Preheat oven to 350°F. Spray a 9x13-inch baking pan with non-stick cooking spray (Pam).

Season each chicken thigh or drumstick with the seasoning mixture as follows: completely cover each piece with seasoned salt, lightly sprinkle pepper on all sides, then very lightly on all sides with garlic salt. Place chicken pieces into prepared pan.

Arrange onion slices on top, covering all pieces with 2 to 3 slices. Use a butter knife to slice thin squares "pats" of butter (2 to 3) over each piece.

Bake at 350°F for for 60 to 75 minutes. When chicken has 20 minutes left to bake, prepare the boxed rice according to package directions.

Use a steak or boning knife to slice meat away from bones of the baked chicken. Remove any gristle. Dispose of bones and other "residue".

Add rice and chicken pieces together in mixing bowl. Stir together thoroughly and serve.
