TEX-MEX RICE 
12 oz. Montgomery Jack cheese, cubed or grated
2 cans green chilies, chopped
3 c. cooked white rice
3 c. sour cream
1 1/2 c. cheddar cheese, grated

Mix all ingredients except grated cheddar cheese. Sprinkle cheddar cheese over top of casserole. Bake at 350 degrees for approximately 30 minutes.

Makes large quantity. Can be divided in 1/2 for regular size casserole. Serves 6.
