CHINCHIN NIGERIAN COOKIES 
2 tbsp. butter
1 c. flour
2 tbsp. sugar
1 tsp. nutmeg
1 egg, well beaten
vegetable oil (for frying)

Rub the butter into the flour. Add the sugar and nutmeg; mix well. Mix in the beaten egg, forming a stiff dough. Knead until smooth. Roll out on a floured board about 1/4-inch thick. Cut crisscross fashion, forming small diamond shapes. Heat oil to 350°F to 375°F. Fry the dough until it browns evenly. Drain on paper towels.
