FISH SUPREME 
Use grouper, flounder, red snapper
1/4 c. butter
1/4 c. flour
1/2 tsp. salt
1/8 tsp. white pepper
2 1/2 c. hot milk
1/2 c. white wine

Broil fish in covered dish, grease with lemon juice, for 1 hour at 300 degrees. Remover fish from oven, pour completed sauce ove fish.

SAUCE: Combine butter and flour in saucepan and stir with a whip until smooth. Cook, stirring for 2 minutes, add salt, pepper and hot milk; cook and stir for about 5 minutes; as mixture thickens add wine. Stir about 2 minutes. Then pour hot sauce over fish. Serve hot.
