STUFFED ROUND STEAK 
1 1/2 lb. beef round steak
Dash of salt
Dash freshly ground pepper
Dash ground nutmeg, optional

FILLING:

1 med. onion, finely chopped
1/2 c. finely chopped ham
1/2 c. finely grated Cheddar cheese
1 egg, beaten
1 tbsp. cornstarch
2 tbsp. butter
3/4 to 1 c. beef broth
2 green peppers, thinly sliced

Pound meat slightly with hand. Sprinkle with salt, pepper and nutmeg, if used. Prepare filling by combining all ingredients. Spread filling over meat, leaving a little room at edges for filling to spread when meat is rolled up.

Roll up meat jelly roll fashion. Tie with a string to make an even roll. Brown meat on all sides in butter in pan. Add half of the beef broth. Cook over medium heat, covered, until meat is done to your liking. Check for doneness. Add more beef broth from time to time.

Strain pan juices. Make gravy, if desired, by adding either a little cornstarch dissolved in cold water or a little flour dissolved in water. Add a few drops of soy sauce for color and flavor if necessary.
