SAUSAGE AND KRAUT SKILLET 
2 tsp. shortening
1/4 c. diced onion
1/4 c. diced green pepper
4 c. sauerkraut
1 c. diced apples
2 lb. smoked sausage

Melt shortening in skillet. Add onion and green pepper and saute 5 minutes. Add sauerkraut and diced apples. Cover and cook over low heat for 25-30 minutes, stirring occasionally, until apples are tender. Meanwhile saute sausage until brown. Top hot sauerkraut mixture with sausage and serve. Makes 6 servings.
