CARROT CASSEROLE 
2 1/2 c. cooked mashed carrots
3/4 c. sugar
3 tbsp. flour
3 lg. eggs
1 stick butter, softened
1 tsp. baking powder
Dash cinnamon

Mix together all above ingredients. Pour into greased 2 quart casserole. Bake at 375 degrees for 15 minutes, uncovered. Bake at 350 degrees for 40 minutes, uncovered. Note: For a fluffier casserole, separate egg whites from yolks. Beat whites until firm and fold them into mixture last.
