NEW YORK CHEESECAKE 
1 c. graham cracker crumbs
3 tbsp. sugar
3 tbsp. melted butter
2 (8 oz.) pkgs. cream cheese
1/2 c. sugar
Dash nutmeg
2 eggs, separated
1 tbsp. lemon juice
1 tsp. grated lemon rind
1/2 tsp. vanilla

Combine crumbs, sugar and butter. Press onto bottom of a 9-inch springform pan. Bake crust in preheated (325 degree) oven for 10 minutes. Combine softened cream cheese, 1/2 cup sugar, nutmeg, lemon juice, lemon rind and vanilla, mixing until well blended. Add egg yolks, one at a time, mixing well after each one.

Fold in stiffly beaten egg whites; pour all mix over crumbs. Spread gently. Bake at 300 degrees for 45 minutes. Chill before serving. Makes 10-12 servings.
