1/2 c. butter 1/2 c. peanut butter 1/2 c. granulated sugar 1/2 c. light brown sugar, firmly packed 1 lg. egg 3/4 tsp. vanilla 1 1/4 c. flour 3/4 tsp. baking soda 1/4 tsp. salt Heat oven to 375 degrees. In large bowl with mixer at medium speed, beat butter, peanut butter, granulated sugar, and 1/4 cup brown sugar until light and fluffy. Beat egg and vanilla until thoroughly blended. In small bowl combine flour, baking soda, and salt with mixer on low speed beat into butter mixture until blended. Sprinkle remaining 1/4 cup brown sugar on top of dough, using rubber spatula, lightly fold in so granules are visible. Roll heaping teaspoons of dough into balls, place 2 inches apart on ungreased cookie sheet. Using bottom of glass, press each ball into 1/4 inch circle. Bake 5-8 minutes until brown. |
