GOOD-OLE-OAT MUFFINS 
2 c. Quaker Oat Bran cereal, uncooked
1/3 c. brown sugar, packed
1/4 c. all-purpose flour
2 tsp. baking powder
1/4 tsp. nutmeg
1 c. skim milk
2 egg whites, slightly beaten
3-6 tbsp. water
1 1/2 tsp. vanilla
1/4 c. Quaker Oats (quick or old fashioned), uncooked
1 tbsp. brown sugar, packed

Heat oven to 400 degrees. Line 12 hole muffin tin with paper baking cups. Place Oat Bran, 1/3 cup sugar, flour, baking powder, and nutmeg in a bowl and mix thoroughly. Add combined milk, egg whites, water, and vanilla. Mix just until moist.

Fill cups to top. Combine oats and remaining 1 tablespoon sugar and sprinkle evenly over batter. Bake until golden brown.

Serves 12.
