WALDORF ASTORIA RED CAKE | |
1/2 c. shortening 1 1/2 c. sugar 2 eggs 2 oz. red food coloring 1 tsp. vanilla 4 tbsp. cocoa 1 tsp. salt 2 c. flour 1 c. buttermilk (or milk with 1 tsp. vinegar) 1 tsp. vinegar 1 tsp. baking soda Mix shortening, sugar, eggs, food coloring and vanilla. Mix together in another bowl cocoa, flour and salt. Add dry ingredients to shortening mixture alternately with buttermilk (or milk with vinegar). Mix together vinegar and baking soda and fold into batter but do not blend in. Bake at 350 degrees for 30 minutes in two 8 or 9 inch circular pans or 1 large sheet cake pan. Frost with boiled frosting. BOILED FROSTING: 1 c. milk 1/4 c. flour Pinch salt 1 c. sugar 1/2 c. shortening 1 stick butter 1 tsp. vanilla Cook milk and flour until thick. Add salt and set aside. Beat sugar, shortening and butter on high speed until fluffy. Add milk mixture and vanilla and beat on high speed until fluffy. This frosting needs alot of beating; the more it is beaten the fluffier it will be. |
