BUTTERMILK PIE 
1 1/4 c. sugar
2 tbsp. self-rising corn meal
3 eggs, lightly beaten
1/2 c. (1 stick) butter, melted
1 tsp. vanilla
1 unbaked pie shell

Heat oven to 350 degrees. Combine sugar and corn meal. Add eggs, butter, buttermilk and vanilla. Blend well. Pour into pie shell. Bake 40-45 minutes or until set. Cool on wire rack.
