ISABELLA MAXWELL'S HAGGIS | |
1 sheep's stomach, cleaned & scraped 1 sheep's heart 2 lb. sheep's liver 3 lb. sheep's lungs 1 c. pearl barley 2 c. coarse oatmeal 2 garlic cloves Salt & pepper 1 lb. onions Take the stomach and turn it inside out. Boil the lungs and heart for 6 hours and just 15 minutes before you're through add the liver. Boil the barley until soft. Chop the onions and finely chop the cooked meat. Mix all the ingredients and add some of the juice the meat was boiled in. Fill the stomach with this mixture. Tie both ends with string and drop it in nearly boiling water, or steam for 1 1/2 hours. Serve hot with mashed turnips and potatoes. This can be made in a bowl if a sheep's stomach is not available. Pig's offal can be used instead of sheep's. Proceed in the same way. |
