TEX MEX ENCHILADAS 
1 1/2 lb. ground beef
1 pkg. taco seasoning
1 (12 oz.) can tomato paste
1 c. water
1 c. onion, chopped
1 tsp. salt
12 flour tortillas
Grated cheddar cheese
1 can (4 oz.) chopped green chilies

Brown beef. Drain well. Stir in taco seasoning, tomato paste, water, onions and salt. Simmer for 15 minutes, stirring occasionally until liquid is reduced. Preheat oven to 350 degrees.

Spoon 2 or 3 tablespoons meat mixture into each tortilla. Roll tightly and place in 9 x 13 inch baking pan with non-stick surface. Sprinkle with green chilies. Top with remaining meat mixture and grated cheese. Bake at 350 degrees for 15 to 20 minutes.
