CURRIED CHICKEN SANDWICHES 
butter, softened
8 slices bread, toasted
1 c. cut-up cooked chicken or 1 (5 1/2 oz.) can boned chicken, chopped
1 med. onion, chopped (about 1/2 c.)
1/2 sm. green pepper, chopped (about 1/4 c.)
1/2 c. chopped salted peanuts
1/2 c. mayonnaise or salad dressing
1 tbsp. lemon juice
3/4 tsp. curry powder

Spread butter over 1 side of each slice toast. Mix remaining ingredients. Spread to edges of toast. Set oven control to broil and/or 500 degrees. Broil with tops about 3 inches from heat until hot and bubbly, about 3 minutes. Yield: 4 servings.
